Ingredients

  • 1 big-sized brinjal (eggplant)
  • 1 tomato
  • 1 lemon
  • ½ cup yogurt
  • 1 tsp mixed herbs

Instructions

  1. Cut the brinjal into thin slices.
    • Marinate with yogurt, lemon, and mixed herbs for 5 minutes
    • Roast the marinated brinjal in 1 tsp olive oil for 5 minutes
  2. Prepare the tomato sauce:
    • Boil the tomato and peel it
    • Add 1 tsp olive oil and mash the tomato
    • Add 1 crushed green chilli, 1 pinch salt, and 1 pinch black pepper
    • Mix for 3 minutes
    • Add 2 tsp water and simmer on low flame
